This recipe is really straight forward. When I make it, the main purpose is that it’s a base recipe that I can then later add adjuncts to. I’ve used this for an apricot wheat, bourbon orange wheat, vanilla wheat and raspberry jalapeno wheat. It’s clean and allows you to really let the flavor of whatever you’re adding shine.

Basic Wheat (5 gal)

4.5# Wheat Malt
3.5# 2-row
.5# Munich
.5#Flaked Wheat
.5# Rice hulls
.3 oz Cascade (7.1%)
.3 oz Liberty (4.3%)
.3 oz Northern Brewer (9.1%)
Wyeast 1056 American Ale

• Mash 3 gallons at 152  for 60 minutes
• Sparge with 3  gallons at 170
• Top kettle off to 6 gallons if you didn’t get enough runoff
• Boil 60 minutes
• Add  Northern Brewer  as First Wort Hops
• Add Liberty with 40 minutes left
• Add Irish Moss with 15 minutes left
• Add  Cascade with 5 minutes left
• Primary 1 week
• Secondary 2 weeks – I split into 4 smaller batches: Raspberry Jalapeno, Basil, Bourbon Orange Blossom and Apricot. You can see amounts here
